Non burger Interlude - Black Pepper Chicken

I cooked a great Black Pepper chicken dish the other night. We bought a random jar of black pepper marinade and I thought black pepper chicken would be a winner. The dish is fairly basic - Fry an onion cut in triangles - add some capsicum. At the same time cook some cut up carrot in the microwave with a bit of water. Add the par cooked microwave carrot to the onion and capsicum til mostly cooked, with the juice, - then remove (pour it into one of your serving bowls to save dishes). Now get your diced up chicken breast and cook turning once until its not pink. Add the vegies, add 3 sliced up birdseye chilis and stir a bit - Add 3 Tablespoons of black pepper sauce from the jar with half a glass of red wine and a bit of water. Add some large cut mushrooms and cook for a while stirring until the mushrooms absorb a good amount of juice.
With this meal we were lucky to have some left over lemon rice from the fantastic Taj Bengal Restaurant at Ashgrove. This rice was microwaved til warm then formed the base of the bowls.
Scoop stir fry on top, add a few leaves of fresh basil and serve - lovely!!!

Dinner for two


Breakfast the next day cooked by the lovely courtney - this is sweet potato,onion,chili and rice scrambled eggs on burgen seeded wholemeal toast. Tasted much better than it looks believe!
